Spiced Pumpkin Muffins

A hands down favorite for autumn baking has to be pumpkin!

Have your ingredients out and ready, "mise en place"!

While available throughout the year, for me, it has to be autumn to think about making anything pumpkin. Pumpkin pie, pumpkin bread, pumpkin pancakes . . . all staples of a baker's fall repertoire.

It's just the perfect time of year to keep a stash of pumpkin muffins ready for breakfast or for an afternoon treat with your coffee. I like to make a batch and divide into groups - one to enjoy immediately and the other to freeze so there are always some on hand.

This is a recipe I've adapted from

Sara Foster's, "The Foster's Market Cookbook," which is one of the ones, out of shelves of cookbooks, that is well worn with love. Its dust jacket long gone from spills and tears, its pages dog eared and smudged with goo, slips of paper and ribbons sticking out from favorite recipe pages. You know what I'm talking about. This is an adaptation of her pumpkin bread which I've made dozens of times, the penciled notes on the page reflecting my personal interpretation of this classic favorite.
